Perfect Waffle Recipe for Calphalon No-Peek Waffle Maker

I swear by this waffle recipe for my own Calphalan Waffle Maker. I've never made the chocolate chip waffles or tried substituting brown sugar, but the basic recipe is delicious. Saved from this Amazon review..

Here's my PERFECT WAFFLE RECIPE (it's actually from the Better Homes & Gardens cookbook (page 127 - "fast waffles"), except that I add sugar to the recipe):

You will need:
2 eggs
1-3/4 cup milk (I use 2%)
1/2 cup vegetable oil
1-3/4 cup all-purpose flour
2 tablespoons sugar
1 tablespoon double-acing baking powder
1/4 teaspoon salt


Directions:
1. Separate the egg whites from the yolks (do not skip this step - it makes all the difference in fluffy waffles).
2. Beat the egg whites until they thicken into a foamy white texture and stiff peaks form, set aside.
3. Add milk & oil to egg yolks, beat gently until mixed, do not over-mix.
4. Add all dry ingredients to yolk/milk/oil mixture, stir with spoon first, then beat until all lumps disappear (B H&G says to leave the batter lumpy - my mum and I respectfully disagree).
5. GENTLY fold beaten egg whites into mixture, DO NOT stir or beat. I personally fold until no lumps of egg white remain visible, although others may disagree, including B H&G.
6. Pre-heat waffle iron to whatever setting you intend to bake your waffles at (I use just one notch above "Medium").
7. Spoon batter into measuring cup (for precision and easier pouring), fill to 2 cups exactly (you may have to adjust this depending on what recipe you use).
8. When chime signals iron is ready, evenly pour batter onto iron. There should be no need to spread the batter using a utensil. There may be some batter that runs over into the excess batter channel - this is fine, if not preferred.
9. I close the lid very slowly (5 seconds) to hedge against spillage.
10. Enjoy your perfect waffles when the chime sounds!

Other useful hints, tips & tricks:
1. For the setting I like, which is just a click above Medium, it ALWAYS smells like the waffles are burning, but alas! they are not. So don't be alarmed if you smell burning waffle. If they truly come out burnt, just adjust the dial down a notch.
2. This recipe makes just over 4 cups of batter, which is 2 batches on this waffle maker. The recipe is pretty easy to cut in half if you just want to make one batch. If you're making waffles for yourself, one batch will be more than enough!!
3. My kids like chocolate chip waffles - try using a hair under 2 cups of batter - pour it in the iron, THEN sprinkle a few chocolate chips on top of the batter. They sink into the batter and partially melt during baking, creating a restaurant-quality chocolate chip waffle the kiddos will love!
4. Some recipes I've looked at recommend substituting some brown sugar for the regular sugar - I tried this and it wasn't bad (I replaced the 2 tablespoons of sugar with 1/2 tablespoon of brown sugar).

Kraft Original Baker's German's Cocolate Cake

Original Baker's German's Sweet Chocolate Cake with Coconut-Pecan Filling and Frosting

1 pkg. (4 oz.) BAKER'S GERMAN'S Sweet Chocolate (note: looks like a bar of chocolate in store)
1/2 cup water
4 eggs, separated
2 cups flour
1 tsp. baking soda
1/4 teaspoon salt
1 cup butter, softened
2 cups sugar
1 tsp. vanilla
1 cup buttermilk

Heat oven to 350°F

Cover bottoms of 3 (9-inch) round pans with parchment (or wax paper); spray sides with cooking spray (I recommend using butter or Crisco right before pouring in the cake batter because the cooking spray just runs to the bottom and makes the wax paper greasy and possibly harder to get off the cake). Microwave chocolate and water in large microwaveable bowl on HIGH 1-1/2 to 2 min. or until chocolate is almost melted, stirring after 1 min. Stir until chocolate is completely melted.

Beat egg whites in small bowl with mixer on high speed until stiff peaks form (if using KitchenAid Stand Mixer or similar use Wire Whip to beat egg whites, not Flex Edge Beater); set aside. In small bowl combine flour, baking soda and salt. Beat (with Flex Edge Beater) butter and sugar in large bowl with mixer until light and fluffy. Add egg yolks, 1 at a time (or 1 spoonful at a time if yolks are broken) beating well after each. Blend in melted chocolate and vanilla. Add flour mixture alternately with buttermilk, beating until well blended after each addition (I do about 1/3 flour mixture, then half the buttermilk, then 1/3 flour mixture, etc. until finished).

Add egg whites; stir gently until well blended. Pour into prepared pans.

Bake 30 min. or until toothpick inserted in centers comes out clean. Immediately run small spatula around cakes in pans. Cool cakes in pans 15 min. Remove from pans to wire racks; cool completely.

4 egg yolks
1 can (12 oz.) evaporated milk
1-1/2 tsp. vanilla
1-1/2 cups sugar
3/4 cup butter or margarine
1 pkg. (7 oz. or 2-2/3 cups) BAKER'S ANGEL FLAKE Coconut
1-1/2 cups chopped PLANTERS Pecans (unsalted pecans) 

For frosting, beat egg yolks, milk and vanilla in large saucepan with whisk until blended (it's important that the egg yolks are well blended before cooking, think: scrambled egg consistency).

Add sugar and butter; cook on medium heat 12 min. or until thickened and golden brown, stirring constantly. Remove from heat.

Add coconut and nuts; mix well. Cool to desired spreading consistency. Spread between cake layers and on top of cake.

Game Idea Step 5: Game Melody

The next thing I made for my game was the game melody.  I didn't think I'd find a melody I liked and that was unique enough so I decided to try making my own.  I used a keyboard app for Android called ORG 2018 by Sofeh Sunrise to make the basic melody, along with some sheet music paper:

I then plugged that into MuseScore, a free program to create sheet music which also allows you to change instruments and save an MP3 or WAV file.

In MuseScore I added the left hand notes and used a piano as the instrument, which sounded too classical for a game.  I made one with a violin just for fun, then I changed the piano to a xylophone and liked it so I imported it into my game, it's just the right hand notes.

Here's a video of my game so far with the background, melody and some blueprints.  Long ways to go yet, including animating the cats and creating the enemies.  Not sure what I want them to look like yet. I'll probably use the starter content character shrunk down for the enemies for now because it takes so long to animate and I still have to do the cats.

Stuff still to come: Create spawn points, create enemies, animate cats, script dead zone, script cats, design finish line, make finish line matinee, make health and coins show on screen.

Newport Dunes 5/14/18

Spent last weekend at Newport Dunes with my parents for my dad's birthday and mother's day.  It was a much needed vacation.
